he dosnt mention the health benefits or the ethical reasons for taking meat off the menu. however, at least he sees some of the environmental reasons for keeping beef off his menu. to kill an animal, be it a moose or a honey bee, when there are plenty of substitutes for the the animal product or biproduct simply because you prefer the taste or texture is undeniably immoral. if the being suffers there can be no justification for not taking that suffering into account. 18% of greenhouse gasses are a result of animal production. this is more than all transportation worldwide. the leading cause of death in the united states is heart disease.
